Ginger Garlic Green Beans

I had made some Garlic Green Beans a few weeks ago, and I still had some green beans left. We were in a pinch for dinner so I grabbed some garlic and when I went to grab the beans, I saw some ginger and of course thought it would go perfectly.

I sliced up the garlic and put it in the pan with a little olive oil and while the garlic was started cooking I quickly peeled and sliced the ginger super thin. I then toasted the ginger and garlic together until fragrant and added the green beans.

It was delicious! These few ingredients pack a punch of flavor. The ginger gives the beans a slightly spicy flavor with a hint of sweetness, and the garlic has a nice nutiness. I was happy just eating the ginger, and my two year old loved the garlic and asked for more green beans; another huge hit!

Some of the ginger is just starting to turn bright yellow, that’s what you are looking for.

A little closer view of the garlic and ginger. If you look closely, the ginger is just starting to turn color; from its pale yellow, to a bright yellow. The thinner you slice the ginger, the quicker it cooks.

See the color of the beans, give them about two minutes, with out turning them. I usually set my timer so I’m not tempted to mess with them. When the timer goes off, I turn them and see a bright green color, and then add the salt. I give them another two minutes and then serve immediately.

Ingredients

  • 1 lb green beans
  • 3-4 cl9ves of garlic, sliced
  • 1″ – 1.5″ fresh ginger, sliced
  • 1/2 tspn salt, to taste
  • 1 Tbspn olive oil

Directions

  • Peel and slice the ginger and garlic, add to a medium heat skillet.
  • Once the garlic is fragrant ans the ginger changes in color, about 1-2 minutes, add the green beans.
  • Cook the green beans for about 2 minutes, and then turn and sprinkle some salt on them. Cook for about another 2 minutes, until they have turned to a bright green color.
